DealDash’s Weeknight Dinners for Busy May Nights

And while I love a cozy home-cooked meal, some nights we’re just lucky to get everyone to the table before 8 p.m. That’s why I keep a little stash of simple, no-fuss dinner ideas that come together fast and keep the whole family happy. Here are a few of our weeknight winners that are perfect for your busiest spring evenings, from DealDash.
Sheet Pan Dinners: One Pan, No Stress
I love a good sheet pan meal because it’s all done in one go. There’s less mess, less cleanup, and dinner in under 30 minutes. One of our favorites is Sheet Pan Chicken Fajitas. Just toss sliced chicken, bell peppers, and onions with olive oil and taco seasoning, spread it all out on a pan, and roast at 425°F for 20–25 minutes. Serve with tortillas, cheese, and sour cream, and you’re golden. If you want to switch it up, swap in shrimp, tofu, or steak for variety. Also, don’t forget pre-sliced frozen veggies if you’re in a real pinch!
Rotisserie Chicken Magic Dinner
Rotisserie chicken is my secret weapon on busy nights. You can serve it straight with a side salad and microwaveable mashed potatoes, or shred it up for BBQ Chicken Sliders. Just mix with your favorite BBQ sauce, pile onto Hawaiian rolls, and melt a little cheese over the top under the broiler. If you end up with leftovers, toss into quesadillas, tacos, or even stir-fry for the next night.
Pasta Night (with a Shortcut)
Skip the fancy sauces and go for One-Pot Creamy Sausage Pasta. Just brown sliced smoked sausage, toss in a box of pasta, a jar of marinara, and enough broth to cook the pasta through (about 3–4 cups). Simmer until tender, stir in a splash of cream or cream cheese, and sprinkle with parmesan. Dinner = DONE. If you’re looking for more veggies, stir in a handful of spinach, a can of mushrooms, or frozen peas at the end.
