My two older kids are 4 and 8, and they both love to help in the kitchen. I think that making Christmas cookies was one of the highlights of their Christmas season. Now that it’s getting warmer outside my family is eating a lot more salad than before. Here are 2 of my favorite salads.

BLT Salad with Lime Vinaigrette

Ingredients for the salad:

  • 4 slices bacon, diced
  • 4 cups chopped romaine lettuce
  • 1 avocado, halved, seeded, peeled and diced
  • 1 cup cherry tomatoes, halved
  • Optionally, you can also add 1/2 cup of pomegranate seeds
  • Optionally, you can also add some corn
  • Optionally, you can also add some shredded or crumbled cheese (cheddar, goat)
Ingredients for the lime vinaigrette:
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • Zest of 1 lime

Do you love to cook? I am not a great cook myself, but my Mother-in-Law sure is! Here is one of the dishes that she makes for us.

 My Mother-in-Law is a wonderful lady who immigrated to this country when she was in her early 20s – and she is a fantastic cook. She has been here quite a long time, but her most delicious dishes always have Chinese roots. Here is “Two Soy Sauce Pork.”
