Cut Up and Portion in Bulk

Try cutting up some fruits or vegetables. You can portion them out so that they’re made for one person or the whole family. Regardless of your portion size, you can cook them however you’d like (they’re also great raw), then throw them into a Ziploc bag, freeze them and save them for another night. This is perfect for making a side dish with dinner.

Make Different Flavored Batches

Try making batches of chicken. I frequently cook 8-10 pieces of chicken at one time and simply change the seasoning that I use. Even in a normal week, I’ll bake and make lemon pepper, a Jamaican jerk flavor, and a blend of salt/pepper and other hot spices. I’ll use that for lunch as chicken can keep for a few days in the fridge without issue.

Utilize the Slow Cooker

Your crockpot makes things even easier. You can make large batches of chicken, chili, or soup without much effort. Cooking meat of your choice in soda makes for fall off the bone tenderness. Place the frozen meat in and cover it with enough soda (any soda will work). Cook on low for 8 hours then drain it. It will be nice and tender. I like pulled BBQ chicken, so I drain the soda, pull the meat apart, then add BBQ sauce and cook for 30 minutes.

Double and Freeze

You’ll find that most recipes are easy to double up. So, simply double your recipe and put one serving int a Ziploc bag and freeze it. I prefer bags over plastic containers because they’re easier to fit in the freezer.
