DealDash Cooks: Thanksgiving Sides

The turkey is usually the star of the show on Thanksgiving, but these side dishes make for great runners-up.

Most people have a big turkey, sometimes a ham, and various and sundry side dishes on Thanksgiving. Generally I prefer the side dishes to the turkey, so I always make sure to bring a few when we attend Thanksgiving dinner at my in-law’s house. Here are a couple of my favorites that you might like to try for your own Thanksgiving dinner.

Mashed potatoes – Yum, yum! Mashed potatoes are definitely a family favorite, I have seen people take seconds and even thirds of my mashed potatoes at Thanksgiving dinner.

Ingredients:

  • 2 pounds Yukon gold potatoes, peeled, quartered and cut into 1-inch chunks
  • 8 tablespoons butter, room temperature
  • 1/2 cup half-and-half
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh chives
  • 1 Tbs garlic powder
  • Salt and pepper to taste

Directions:

  1. Using a large saucepan, cover the potatoes with 1 inch of cold water, then bring to a boil. Reduce to a simmer and cook 20-25 minutes, they should crumble with a fork.
  2. Drain the potatoes, and wipe the saucepan dry. Add the potatoes back to the saucepan and mash to a uniform consistency.
  3. Fold in the butter and half-and-half, and then fold in sour cream, chives, and garlic powder.
  4. Season with salt and pepper.

Corn casserole – This delicious corn casserole is SO easy to make you might think about incorporating it into your regular dinner rotation.

Ingredients:

  • 2 cloves of garlic, chopped
  • 2 cans of whole kernel corn (I prefer yellow and white mixed, but you choose)
  • 1 package of cream cheese
  • 2 Tbs butter
  • 1/2 Cup grated cheddar cheese
  • 1/4 Cup Parmesan cheese, 1/2 Cup Parmesan cheese (separated)
  • 1/2 Cup breadcrumbs
  • Salt and pepper to taste

Directions:

  1. Saute two cloves of chopped garlic in a saucepan until they start giving off that beautiful garlic smell.
  2. Add corn, cream cheese, butter, cheddar cheese, and 1/4 cup Parmesan cheese and stir until combined.
  3. Add salt and pepper to taste.
  4. Take mixture off of the stove, and put into a baking dish.
  5. Top with the 1/2 cup of Parmesan cheese and the breadcrumbs.
  6. Bake at 375 for 15-20 minutes, until breadcrumbs are just starting to brown.
