DealDash Cooks: Asian Chicken Stir Fry

I have often talked about my Mother-In-Law, a lovely lady who has been in the USA for over 30 years but still has many wonderful Asian recipes to share.

Today we are going to talk about how to make a stir fry with an Asian flair. This recipe is made with chicken, but you could easily substitute either pork or even tofu for you vegetarians out there.

Ingredients:

  • Combine both soy sauces, brown sugar, and corn starch in a small bowl; stir until smooth. Mix ginger and garlic into sauce; coat chicken with marinade and refrigerate for 20 minutes or more.
  • Heat 1 tablespoon sesame oil in a large skillet over medium-high heat. Cook and stir mushrooms, broccoli, carrots, and onion until just tender, about 3-5 minutes. Remove vegetables from skillet and keep warm.
  • Remove chicken from marinade, saving the liquid. Heat 1 tablespoon sesame oil in skillet over medium-high heat. Cook and stir chicken until slightly pink on the inside, about 4 minutes ; return vegetables and saved marinade to skillet. Bring to a boil; cook and stir until chicken is no longer pink in the middle and vegetables are tender, 5 minutes. Serve over prepared rice.

Yummy! This is a very healthy and nutritious dinner that can be made even healthier by using brown rice or quinoa instead of white rice. However, I like the classics so I always serve the stir fry over fresh white rice made with a rice cooker.
