DealDash Cooks: Zucchini Noodles

Veggie spiral slicers have been all the rage this past summer, and making zucchini noodle “pasta” has never been easier. Here is a delicious recipe for Zucchini “Pasta” with meatballs.

I never thought that I would be a supporter of zucchini pasta, but here we are in 2016, and I am here to say that it’s pretty good! If you are trying to get healthier and are counting carbs, then zucchini pasta is the way to go. It’s significantly easier to make zucchini pasta with a spiral veggie cutter than making it by hand, but you can use whichever method that you feel comfortable with. And FYI, those spiral veggie cutters are very affordably gotten at Bed, Bath, and Beyond. Ingredients:

  • 1 lb. ground beef (I like the 97/3, but use whatever you like)
  • 1/4 Cup Italian seasoned dry breadcrumbs
  • 1 egg
  • 1/3 Cup Parmesan cheese
  • 1 Cup Provolone cheese, grated
  • 10 grape (or cherry) tomatoes sliced in half
  • 2 garlic cloves, cleaned and minced
  • 2 Tbs extra-virgin olive oil, divided
  • 1 jar tomato pasta sauce (I like Ragu Super Chunky Mushroom, myself)
  • 1 can mushrooms (drained)
  • 4 medium zucchini, cut into noodles
  • Salt and Pepper

Directions:

  1. Combine beef, breadcrumbs, egg, Parmesan, approximately 1 garlic clove, and 1/2 teaspoon each salt and pepper in a bowl. Form into 12 –  2″) beef meatballs.
  2. Heat 1 tablespoon oil in a large skillet over medium heat. Add beef meatballs and cook, turning occasionally, until brown on all sides, approximately 5 minutes.
  3. Reduce heat to medium-low and gently stir in pasta sauce and mushrooms. Simmer, turning meatballs occasionally, until meatballs are cooked through, approximately 15 minutes.
  4. While sauce is simmering, heat 1 Tbs oil in a medium skillet over medium-high heat. Add zucchini noodles, tomatoes, and remaining minced garlic and cook until just tender, approximately 3 minutes. Season with salt and pepper.
  5. Serve meatballs over noodles topped with Provolone and Parmesan cheese.
