This baked cheesy macaroni is super-simple to make, and people love homemade macaroni and cheese. It is light years ahead of the boxed versions, and almost as inexpensive to make.

This baked cheesy macaroni has a powerful advantage for you: it is made with dry pasta, so there’s no need for precooking. Here’s a tip: the pasta cooks in the oven, absorbing the liquid from the dairy products. That’s a time-saver right there! INGREDIENTS

  • 2 tablespoons butter
  • 1 cup cottage cheese (not low fat, sorry healthy food lovers)
  • 2.5 cups milk (not skim, again, apologies)
  • 1 teaspoon dry mustard
  • Pinch of cayenne pepper
  • Pinch of grated nutmeg 
  • ¼ teaspoon freshly ground black pepper
  • 1 pound sharp or extra-sharp cheddar cheese, grated (Preferably use white cheddar, but orange will do.)
  • ½ pound elbow pasta, uncooked (see, this is the time-saver right here, folks)

DIRECTIONS

  1. Heat oven to 375 degrees and position an oven rack in upper third of oven.
  2. Use 1 tablespoon butter to butter a 9-inch round or square baking pan.
  3. In a blender, purée cottage cheese, milk, mustard, cayenne, nutmeg and pepper together.
  4. Reserve ¼ cup grated cheese for topping. In a large bowl, combine remaining grated cheese, milk mixture and uncooked pasta. Pour into prepared pan, cover tightly with foil and bake 30 minutes.
  5. Uncover pan, stir gently, sprinkle with reserved cheese and dot with remaining tablespoon butter. Bake, uncovered, an additional 30 minutes, until browned.
  6. Let cool at least 15 minutes before serving.

This is such a delicious side dish, and it pairs well with just about any meat that you can imagine. I am planning on making this tonight with crispy baked chicken and garlic green beans on the side. Yummy, as well as kid-friendly, the perfect combination.
