Risotto is a delicious Italian rice dish that is easily customized to your taste once you get the optimal technique down. This isn’t your garden variety white rice which cooks without any babysitting needed in a rice cooker. Risotto needs to be stirred and watched the entire time it is on the stove. The result is worth it, though. Mushroom risotto is a rich, creamy, and textured rice that can be served as an appetizer, main course, or side dish. Here is a recipe from DealDash for you to enjoy.

Ingredients

  • 2 cups arborio rice.
  • 1 lb sliced portobello and/or crimini mushrooms
  • 1 small onion
  • 2 cloves of garlic
  • 1 tablespoon of butter
  • 3 tablespoons of olive oil
  • 6-8 cups of chicken, vegetable, or beef broth
  • 1/2-1 cup dry white wine, like a Sauvignon Blanc
  • Salt & Pepper, to taste

Directions

  1. Heat 3 tablespoons olive oil in your largest skillet on medium heat.
  2. Dice 1 small onion and 2 cloves of garlic and add to the oil.
  3. Remove stems, and thinly slice your mushrooms while the onions & garlic cook.
  4. Add the mushrooms to the skillet after 3-4 minutes
  5. Add salt and pepper and stir to coat the mushrooms in oil.
  6. Using a sauce pot, heat up 6 cups of broth while the mushrooms are cooking. Do not heat all the way to boiling.
  7. Cook the mushrooms for 3-5 minutes
  8. Add 1 tablespoon of butter
  9. Add the 2 cups of arborio rice and constantly stir. Once the butter has melted, add the rice and stir so that it is coated with the oil and butter. Cook for 1 minute before adding any liquid.
  10. Add 1/2 cup of white wine. Add the white wine and stir into the rice. Cook together until almost all of the wine is evaporated or absorbed into the rice.
  11. Add one ladle of hot broth. Once the wine is absorbed, use a ladle to add the first cup of broth to the rice mixture
  12. Constantly stir the broth and rice. You cannot stir risotto enough.
  13. Add another cup of broth once the first has been absorbed. Once most of the broth has been absorbed by the rice, add another cup.
  14. Repeat until the broth is gone or the rice is your desired consistency. The rice should be slightly firm and creamy, but never mushy.
